Dikenal sebagai “Indonesian lime”, jeruk purut (Citrus hystrix) merupakan salah satu tanaman sitrus (jeruk-jerukan) yang secara tradisi banyak digunakan sebagai pemberi flavor alami pada berbagai produk makanan dan minuman baik di Indonesia maupun di negara Asia lainnya (Sato et al, 1990; Anonim, 2009). Cita-rasa unik yang nikmat pada masakan Thailand “Tom Yam” tidak terlepas dari kehadiran daun jeruk purut di dalamnya.
